Vždy napište do těla zprávy to co sami přečtete, i kdyby to mělo být jen torzovitě. A to v originálním jazyce dokumentu a pokud možno naprosto přesně tak, jak je text zapsán.

In this forum section is is common for the questioner to transcribe from the recording everything he or she reads.
But sometimes we can make an exception, especially for foreign colleagues.
However - if you want to research old manuscripts in Bohemia and Moravia, it is essential that you learn to read the type of script in which this article is written. This script is called kurent (German Kurrentschrift) and it's a German neo-Gothic cursive. Simply put it's a handwritten form fraktur. So, to finally get to your text:
child: Kateřyna Jozefa Hagkowa
catholic; girl; legitimate
father: Anton Hagek Pekařskeg byl přy Profiantu
mother: Anna dcera Martina Kortwycky Wogaka od Geming Regmentu

in modern czech:
child: Kateřina Josefa Hájková
father: Antonín Hájek, Pekař, byl u proviantu
mother: Anna, dcera Martina Kortvičky, vojáka od pěšího pluku

in english:
father: Antonín Hájek, baker, was at the provisions (I don't understand the meaning - see below)
mother: Anna, daughter of Martin Kortvička, a soldier from an infantry regiment

Why don't I understand the meaning of the note at the baker's? Similar formulations were used for illegitimate children. The father was out mushrooming, the father ran across the field, the father got lost in the forest,... But in such a case the father's name is never given, and the child would not be marked as legitimate. Why would the registry book record that the father was at the grocery store, I really don't understand. That he would travel with his pregnant wife to buy supplies? I don't know, I don't understand. In any case, unfortunately, their origin is not recorded with the parents. You can try to search for the births of their other children, but if they were in the place by chance, such a search can be quite difficult.

This is the most difficult branch of my family tree in part because the archive that holds these records is a bit difficult to navigate but mostly because of the somewhat vague or confusing church records for this family in particular, not to mention the bleeding ink on some of the pages. Here is what I've found so far.

Kateřina Hájková was born 1803 in Jičin (you helped me transcribe and translate her baptism record earlier in this thread).

She had a brother named Jakub Anton born 1805 in Jičin. Here is his baptism record (second entry on the right...this might have the town name where Anna's father is from? Starts with an M?):

I think I found their parents death records. Here is Antonín Hájek in 1825 in Jičin (sixth entry on the left, says he was 60 years old):

And maybe his wife Anna in 1825 in Jičin (tenth entry on the left, says she was 54 years old):

Their daughter Kateřina had at least two children with Martin Kříž in Jičin:

František Hájek/Kříž was born 1829 in Jičin, son of the unmarried Martin Kříž and Kateřina Hájek. Here is his baptism record (fourth entry on the right):

Martin Wogtečh Hájek//Kříž was born 1830 in Jičin, also the son of the unmarried Martin Kříž and Kateřina Hájek. Here is his baptism record (bottom entry on the left):

František Hájek/Kříž ends up moving to Kutná Hora and marries Aloisie Petinger in 1853:

I haven't been able to locate any other records for the father Martin Kříž or Antonín Hájek or Anna Kortvičky. I am excited to excited to extend these branches further back if it's possible. I am also very curious if Martin Kříž might have military records somewhere since it seems several of the records mention his status as a "sprostýho vojiny od c.K. 4. práporu polních myslivcův" (this is according to his son František's 1853 marriage record).

How should I approach this? Does anyone here have suggestions or clues, or expertise in quickly finding these records?

I read that record as follows (transcription/modern Czech/English). Question mark on modern form of Martin's surname.

Hajek Anton baker
Anna daughter of Martin Korotvička(?) from Moravia
